Healthy Paleo Blueberry Mug Cake

Craving something sweet? Healthy and paleo-friendly? Well, this single-serving blueberry mug cake is not only healthy but super simple and quick to make! You can treat yourself with this perfect dessert any time of the day.

Whenever baking, I love using almond flour in most of my recipes because it’s high in healthy fats, fibre, and antioxidants compared to regular flour. This dessert recipe is also paleo and gluten-free friendly. Both the almond flour and coconut sugar are low in glycemic properties which help control blood sugar in people with or without type 2 diabetes. So let’s start!

What you’ll need:

  • A mug or ramekin
  • 3 TBSP of almond flour
  • 1 TBSP of coconut sugar
  • 1 Egg or flax egg
  • 2 TSP of coconut oil
  • 1/2 TSP of vanilla extract
  • 1/8 TSP of baking powder
  • A handful of berries (either blueberry, raspberry, blackberry, or strawberry)
  • 1 TBSP or more of any nut or seed butter (optional)

Instructions:

This is a microwavable mug cake, however if you feel unsure about using the microwave for this dessert you can preheat oven to 350 Degrees.

  1. In a small mixing bowl combine the almond flour, coconut sugar, and baking powder.
  2. Add in the egg, coconut oil, and vanilla extract. Mix all ingredients with a fork until there are no clumps and batter is smooth.
  3. Next, add in your choice of fruit. Be careful not to squish the fruit as they will slightly melt in the heat.
  4. Pour batter into a greased microwave-safe mug or oven-safe ramekin
  5. Place in microwave for 30 second intervals for a total of 1 min and 30 seconds. Microwave watts will vary. If you’re baking it, place it in the oven for 10-12 mins or until golden brown.
  6. After the cake has risen, you can add your nut or seed butter and enjoy!
